Strawberries and cream cupcakes

Create a little cream tea in a cupcake

Make this classic combination of strawberries, jam and clotted cream into a cupcake with perfect results using the Tefal Cake Factory!

Ingredients

  • For the cupcakes
  • 110g caster sugar
  • 60g Rodda's clotted cream
  • 140g self raising flour
  • 70ml milk
  • 1 egg
  • 1 tsp vanilla extract
  • 80g chopped strawberries
  • For the icing
  • 113g Rodda's clotted cream
  • 30g icing sugar
  • 2 tsp milk
  • 1-2 tbsp strawberry jam (optional)

Method

For the cupcakes

  1. Melt the Rodda’s clotted cream for 3 minutes in the non-stick mould using p5 – melting chocolate
  2. Pour the cream into a mixing bowl, add the sugar and stir to combine
  3. Add the flour, egg, milk and vanilla extract and stir again until completely mixed
  4. Add the chopped strawberries and mix until they begin to break down a little into the mixture
  5. Divide the cake batter evenly between the cupcake mould and place in the cake factory
  6. Bake on programme P2 – Individual cakes for 30 minutes
  7. Leave to cool before turning out

For the Icing

  1. Put the icing sugar, milk and Rodda’s clotted cream in a bowl and whisk to combine. The mix will go very loose.
  2. Continue to whisk until it has formed a thick cream.
  3. Add in your jam if using, swirling with the icing – Don’t mix!
  4. Put into a piping bag and swirl on top of your cupcakes.

What does it mean by p5- melting chocolate? Chocolate isn't on the list of ingredients.
