Strawberries and cream cupcakes

Create a little cream tea in a cupcake !

Make this classic combination of strawberries, jam and clotted cream into a cupcake with perfect results using the Tefal Cake Factory!

Ingredients

  • For the cupcakes
  • 110g caster sugar
  • 60g Rodda's clotted cream
  • 140g self raising flour
  • 70ml milk
  • 1 egg
  • 1 tsp vanilla extract
  • 80g chopped strawberries
  • For the icing
  • 113g Rodda's clotted cream
  • 30g icing sugar
  • 2 tsp milk
  • 1-2 tbsp strawberry jam (optional)

Method

For the cupcakes

  • Melt the Rodda’s clotted cream for 3 minutes in the non-stick mould using p5 – melting chocolate
  • Pour the cream into a mixing bowl, add the sugar and stir to combine
  • Add the flour, egg, milk and vanilla extract and stir again until completely mixed together
  • Add the chopped strawberries and mix until they begin to break down a little into the mixture
  • Divide the cake batter evenly between the cupcake mould and place in the cake factory
  • Bake on programme P2 – Individual cakes for 30 minutes
  • Leave to cool before turning out

For the Icing

  • Put the icing sugar, milk and Rodda’s clotted cream in a bowl and whisk to combine. The mix will go very loose.
  • Continue to whisk until it has formed a thick cream.
  • Add in your jam if using, swirling with the icing – Don’t mix!
  • Put into a piping bag and swirl on top of your cupcakes.
