Roar-some cupcakes

Make you cupcakes magical with clotted cream icing

A perfect cupcake and icing base to make any theme you want from roar-some sprinkles and fairy dust, to strawberries and cream or luscious lemon!

Ingredients

  • 110g caster sugar
  • 60g softened butter
  • 140g self raising flour
  • 70ml milk
  • 1 egg
  • 1 tsp vanilla extract
  • For the Icing
  • 113g Rodda's clotted cream
  • 30g icing sugar - sifted
  • 2 tsp milk
  • food colouring, jam or curd to flavour

Method

This recipe makes 6 cupcakes and icing but can easily be doubled for a full dozen!

For the cupcakes

  1. Preheat the oven to 180c/gas mark 4
  2. Add all the ingredients to a bowl and beat with an electric beater until the mix becomes fluffy and pale in colour (approximately 2-3 minutes)
  3. Line a cupcake tin with cases
  4. Fill each cupcake case with 1-2 tablespoons of mix
  5. Cook for 15-20 minutes until risen and golden on top
  6. Leave to cool for 5 minutes before placing on a wire cooling rack

For the Icing

  1. Ensure the cupcakes are completely cool before icing.
  2. Put the icing sugar, milk and Rodda’s clotted cream in a bowl and whisk to combine. The mix will go very loose.
  3. Continue to whisk until it has formed a thick cream.
  4. Add in 2-3 drops of food colouring, and a swirl of lemon curd or jam to jazz up the icing.
  5. Put into a piping bag and swirl on top of your cupcakes.
  6. Decorate with sprinkles, fruit or chocolate!
