  • 60g softened butter
  • 140g self raising flour
  • 70ml milk
  • 1 egg
  • 1 tsp vanilla extract
  • For the Icing
  • 113g Rodda's clotted cream
  • 30g icing sugar - sifted
  • 2 tsp milk
  • food colouring, jam or curd to flavour

This recipe makes 6 cupcakes and icing but can easily be doubled for a full dozen!

For the cupcakes

  • Preheat the oven to 180c/gas mark 4
  • Add all the ingredients to a bowl and beat with an electric beater until the mix becomes fluffy and pale in colour (approximately 2-3 minutes)
  • Line a cupcake tin with cases
  • Fill each cupcake case with 1-2 tablespoons of mix
  • Cook for 15-20 minutes until risen and golden on top
  • Leave to cool for 5 minutes before placing on a wire cooling rack

For the Icing

  • Ensure the cupcakes are completely cool before icing.
  • Put the icing sugar, milk and Rodda’s clotted cream in a bowl and whisk to combine. The mix will go very loose.
  • Continue to whisk until it has formed a thick cream.
  • Add in 2-3 drops of food colouring, a swirl of lemon cur or jam to jazz up the icing.
  • Put into a piping bag and swirl on top of your cupcakes.
  • Decorate with sprinkles, fruit or choclate!
