Strawberries and clotted cream shortbread dessert

a quick, simple and tasty dessert

Make this ahead of time in one big glass bowl or individual serves.

  • For the strawberry layer
  • 200g strawberries hulled and chopped
  • 2 tbsp strawberry jam
  • 1/2 tsp Vanilla extract
  • For the cream cheese layer
  • 100g Cream cheese
  • 100g Rodda's Cornish clotted cream
  • 50g Icing Sugar
  • 10 shortbread biscuits broken into pieces


For the strawberry sauce:

  • Place all the ingredients for the strawberry sauce in a bowl and mix with a fork, mashing some of the strawberries to create a thick sauce

For the cream cheese and clotted cream layer:

  • Place the cream cheese, vanilla and clotted cream in a bowl and stir to combine
  • Sieve over the icing sugar and stir again

To assemble:

  • Place a tablespoon of the strawberry sauce in the bottom of each glass or glass bowl
  • Add a layer of crumbled shortbread
  • Top with a layer of the cream layer
  • Repeat until to the top, finishing with a cream layer.
  • Top with a few slices of strawberry, and a small crumble of shortbread.
