Place all the strawberry topping ingredients in a bowl and stir together until combined.
Leave to sit for 10 minutes to allow the strawberry juices to release and create a sauce.
Whilst this is sitting make the cream filling.
Combine all ingredients for the cream filling in a bowl and whisk together until smooth and combined.
Spoon the cream filling into the tart, smoothing the surface and making sure it reaches the pastry edges, leaving a slight indentation in the middle to keep the strawberry topping from escaping.
Spoon the strawberry topping over the cream filing and garnish with mint and/or almond slices.
Refrigerate or serve immediately.
