Profiteroles

A simple but delicious dessert

The only question you have to ask, who is going to lick the bowl clean!

Ingredients

  • 150ml of water
  • 125g Rodda's butter
  • 75g plain flour
  • A pinch of salt
  • 2 eggs, lightly beaten
  • 300ml of double or whipping cream
  • 100g plain chocolate
  • 3 tbsp of golden syrup

Method

  1. Preheat the oven to 220 degrees Celsius/425 degrees Fahrenheit
  2. Put the water and 75g of butter in a saucepan and heat gently until the butter melts, then bring rapidly to the boil
  3. Remove from the heat and quickly stir in the flour and the salt until the mixture leaves the side of the saucepan clean
  4. Allow to cool slightly, then beat in the eggs a little at a time. Beat well until the paste is smooth and glossy
  5. Spoon teaspoon-sized balls onto a greased baking tray
  6. Bake in the oven for 20-25 minutes until well risen, golden and crisp
  7. Remove from the oven and split each profiterole
  8. Cool on a wire rack
  9. Whip the cream, then use it to fill the profiteroles
  10. Place on a serving plate
  11. Melt 50g of butter, chocolate and syrup over a gentle heat
  12. Pour the chocolate sauce over the profiteroles and serve immediately
