  • 750g new potatoes
  • 1 tbsp chopped chives
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 3 gherkins or cornichons, finely chopped
  • 2 tbsp Rodda’s Cornish clotted cream
  • Pinch of salt and pepper


  • Start by boiling the new potatoes. If large, half or quarter and place in a pot of boiling water. Add a pinch of salt and boil for 15-20 minutes until just soft. Drain and set aside on a plate to cool.
  • Mix the rest of the ingredients until combined.
  • Once the potatoes are cool, add the mixture to the potatoes and fold through with a spoon, coating the potatoes thoroughly.
  • Serve as part of a delicious picnic or side dish to a BBQ.
