Make your pancake day legendary with the tastes of a cream tea in a pancake!
Put the flour, egg and milk into a bowl or large jug. Using a whisk beat well until combined to form a smooth batter.
Heat a little butter in a 24cm pancake pan and pour 3 tablespoons of the batter in the bottom and tip the pan until it covers the whole base.
Cook for 1-2 minutes each side until golden.
Wrap in foil to keep warm whilst you make the next. Repeat until all the pancake mix is used up.
Place one of the pancakes on a plate and spoon on the Strawberry jam, spreading with a knife to cover the pancake.
Add 2-3 spoonsful of Cornish clotted cream on top and repeat with the remaining pancakes.
