Rodda’s Cornish Colada

If you like Piña Coladas...

If like us, you enjoy nothing more than lazing around on a sunny afternoon, try our special Rodda’s Cornish Colada recipe. Easy to make, all you need is frozen pineapple chunks, desiccated coconut, milk, and a spoonful of Rodda’s clotted cream, and a splash of rum (if you wish).

Ingredients

  • 400g of frozen pineapple chunks
  • 200ml of Rodda's semi skimmed milk (or you can use coconut milk)
  • 2 tbsp of Rodda's Cornish clotted cream
  • 20g of desiccated coconut
  • 4 x tbsp of rum

Method

  1. Using a food processor, blend the frozen pineapple, milk, Rodda’s Cornish clotted cream, and desiccated coconut until smooth. This should take approximately 2 minutes.
  2. If you are adding in the rum, add this in a spoonful at a time and mix again in the food processor.
  3. Taste the mixture, and continue to add the rum until you are happy with the final taste.
  4. Pour into tall glasses, add a straw if you wish and enjoy!
