Banana Bread Cookies

All the delicious flavours of banana bread inside these soft and moist cookies!

Ingredients

  • 1 ripe banana
  • 113g Rodda's Cornish clotted cream
  • 65g light brown sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 150g all-purpose flour
  • 1/2 tsp salt
  • 100g chocolate chips

Method

  1. Preheat your oven to 180C/160C fan/Gas Mark 4. Line a large baking tray with parchment paper and set aside.
  2. In a large bowl, whisk together the brown sugar, mashed banana, and Rodda’s Cornish clotted cream until well combined.
  3. Add in the egg and vanilla and continue whisking until light, fluffy, and creamy.
  4. Add the flour, salt, baking powder, and baking soda. Fold until no flour streaks appear anymore.
  5. Gently fold in the chocolate chips making sure not to over mix.
  6. Scoop cookie dough on to your lined baking tray.
  7. Bake for approx. 15 minutes or until the edges look browned. Remove from the oven and keep in the tray for a couple of minutes before placing them on a cooling rack.
  8. Sprinkle with a little extra salt and serve with some more Cornish clotted cream!
