A great gluten free cake perfect for the Coronation

Ingredients

  • 1 tbsp Rodda's Cornish clotted cream
  • 1 egg
  • 2 tbsp whole milk
  • 250g gluten free self raising flour
  • 50g caster sugar
  • 1 tsp gluten free baking powder
  • 60g Rodda's Cornish clotted cream for rubbing in to mixture
  • 4 large strawberries diced small
  • 100g white choclate chips

Method

  1. Blitz together the tablespoon of clotted cream with egg and milk until frothy
  2. Place flour, sugar, baking powder and clotted cream in a bowl and rub together until fine breadcrumbs
  3. Add strawberry pieces and chocolate chips and cover in flour
  4. Then pour in egg, milk, cream mixture and gently bring together, will feel quite wet
  5. Tip out onto a floured surface and knead gently onto a circle shape. Place on a greased lined tray and with a floured knife, make marks across top to segment out. Brush with milk and sprinkle caster sugar
  6. Bake at 200 fan oven for 12 mins, then turn down oven to 180 fan oven and bake for a further 10 minutes until risen and brown. Take out of oven and quickly grate white chocolate over the top
  7. Allow to cool and serve with strawberry jam and more Rodda’s clotted cream
