Cornish Apple Cake

This delicious Cornish Apple Cake recipe has been created by Liz Down, who is one of our Rodda’s Farming Families. The 50 year-old apple tree in her garden at Orchard Cottage produces a generous harvest of beautiful juicy apples every Autumn, and after a warm Summer, this year is no exception.

A firm family favourite – this Cornish treat is best served warm with a spoonful of Rodda’s Cornish clotted cream.

225g Rodda’s Cornish farmhouse butter

225g caster sugar

3 large eggs

225g self raising flour

2 tsp baking powder

25g ground almonds

450g cooking apples, peeled, cored and chopped, tossed in the juice of one lemon

Rodda’s Cornish clotted cream to serve

  1. Preheat the oven to 180c/160c fan/gas 4
  2. Grease a deep 23-34cm cake tin and line the base with baking paper
  3. Cream together the butter and sugar in a bowl until pale and fluffy
  4. Add the eggs one at a time
  5. Sift the remaining flour and baking powder into the bowl, add the almonds, and fold into the mixture
  6. When the mixture is well combined, stir in the apples
  7. Spoon into the prepared cake tin, smooth over the top with the back of a spoon
  8. Bake in the centre of the oven for 50 mins – 1 hour, or until a skewer inserted into the cake, comes out clean
  9. Leave the cake to cool in the tin for 10 mins before turning out on a baking rack
  10. Slice into generous wedges and serve with Rodda’s Cornish clotted cream
